Knife Care

Carbon Steel knives are a joy to use, easy to sharpen, and will develop a very desirable patina over time. To achieve this patina, and avoid rust and pitting, the knife must be kept clean, dry and oiled. Cutting acidic foods will cause the discoloration almost instantly, and can be used to "force" a patina on the knife. Additionally, acidic foods can corrode the edge and effectively dull the knife. When a carbon steel knife comes in contact with acidic or salty substances, it should be thoroughly cleaned and oiled after use to avoid severe corrosion issues. Virtually any oil is suitable to protect the blade, but for knives that may come in contact with food, a food safe oil is recommended. To protect the steel and handle of the knife, all cleaning should be done by hand and never with a dishwasher. During regular use, knives should be kept in their sheath to avoid damage to the edge. For long term storage, it is recommended that the knife be kept in a padded case outside of the sheath, as leather tends to attract and trap moisture which can cause the blade to corrode. Stainless steel knives are far less likely to corrode, but should be treated similarly to carbon steel knives.

In general, you want to keep your leather in a properly conditioned state. Inspect the leather for any indication of dryness and apply conditioner according to the instructions provided for the product of choice. In most climates this only needs to be done once a year, but may be as often as every 6 months or less in dryer climates or during periods of heavy use. Never let leather stay wet for long periods, as the leather can discolor, soften or deform. Don’t let the natural oils in the leather dry out from excessive heat - like in a hot car, near a campfire or fireplace. Only use products intended to condition leather and avoid harsh cleaning chemicals. Never put a dirty knife into a sheath. Never store a knife in a leather sheath for long periods of time, as leather tends to attract and trap moisture against the blade. Lastly, over conditioning leather can cause the leather to prematurely wear out, or change in temper (relative stiffness or softness), so only treat the leather as needed.
